I wasn't able to do a garden this year, but from past experience can relate to the overabundance of zucchini. Everyone's like, "here, have some zucchini!" Around this time EVERY year, my grandparents try to give me these massive zucchinis I swear are longer than my arm (which I take, because I can't say no to my grandparents).
My go to was shredding/freezing to make zucchini bread in the fall/winter. Who am I kidding though, I'm pretty sure I ended up tossing the next summer because I couldn't find the time to make the dang bread.
For the past few weeks I changed to a vegan diet (and remarkably sticking to it well). So, here's a recipe for zucchini bacon to possibly help with your zucchini overload; which looks like it takes a ridiculously long time to make (sorry). If you get around to making it, let me know how it is!
